Mango Chutney



Mango chutney is easy to make! And a great way to take advantage of mangoes when they are in season and plentiful at the market. 

Chutney is an Indian word pronounced as chatni and it means 'strongly spiced'. It is usually a fruit or mixture of fruits in warm spices, cooked with sugar (or jaggery) and an acid, like vinegar. Chutney may be sweet, spicy or a combination of the two. You can have a sweet chutney, very similar to jam, but strongly spiced.


This chutney is spicy from ginger, mustard seeds, garlic, and red chili pepper flakes. It gets its tangy-ness from the acidity in the mangoes and added vinegar, and it gets its sweetness from the mangoes, raisins, and sugar.


The basic tase of this comes from the type of mangoes you use. The mango is combined with the pungent taste of ginger-infused with warm spices like cinnamon, cloves, and cardamom. So, essentially you have a sweet, sour, spicy yet mild burst of flavors.


Ingredients 


Mangoes - I use firm mangoes that are semi-ripe. I find raw mangoes are quite sour while ripe mangoes are sweet and also tend to become smooth.


Ginger - Fresh is the way to go. Mango and ginger are an old classic combination that works perfectly every single time.


Vinegar - I use regular white vinegar. Apple cider works just as well.


Chili - Today I have used both sliced chili as well as chili flakes. You can use sweet chili or hot chilly along with smoked chili flakes. You can also increase or decrease the spiciness of this chutney per your individual preference.


Cinnamon - I highly recommend using a whole stick rather than powder. We want the flavor not the taste of cinnamon.


Cloves, cardamom - It's best to use whole spices. And yet, if you must, use just a pinch of the powder instead.


Star anise - Use a whole spice or omit it. Do not use the powder as star anise can be fairly strong.

Tula Sankramana



The Tula Sankramana is the first day of the Kodava community’s Toleyar month. River Cauvery holds a special significance and is revered by the Kannadiga population. It is believed that the goddess Cauvery rises from the water on this day to bless her devotees. On this day, thousands of people throng near the Talacauvery river to witness the water levels rise. Following this, they take a dip in the holy river as it is considered auspicious.


It is usually held on the 17th day of October and around 100,000 devotees from various parts of Karnataka gather in the Kodagu district to participate in the festivities.
